Production & delivery

This guide shows you how to work out what to prepare and deliver to each patient for each meal service using the printable production and delivery sheets generated by Food Services House Patient Meal Ordering System (PMOS).

Once meal orders are placed, PMOS automatically creates:

  • Production sheet - tells the kitchen what to prepare

  • Delivery sheet - tells staff what to put on each patients meal tray

How to print the production and delivery sheets

  1. In Meal services, select the relevant meal service (e.g. today’s Lunch)

  2. In the top right hand corner click the Production sheet > or Delivery sheet > link

  3. Click the Print button in the top right hand corner

The production sheet

This is your preparation summary. It shows you:

  • Total quantities of each item ordered

  • Menu items grouped by course

  • Any allergen conflicts

  • How many of each tray colour are needed

Mains v.s. Entrees

For the main course, patients can order either a Main or Entree + Sides.

  • Main = a complete main meal that has predetermined sides

  • Entree = the main protein part of a main meal that is designed to be paired with a choice of vegetable and carbohydrate sides

What to do if there is an allergen conflict

  1. Check what the allergen is and dish it’s marked against

  2. Determine if it’s possible to remove the allergen containing ingredient/s from the dish without risk of cross contamination

  3. It is only possible if the allergen containing ingredient can easily be left out/swapped for an alternative without cross contaminating the rest of the dish. For example, not adding a dollop of cream to soup that otherwise does not contain any milk for a patient with a milk allergen, or using gluten free bread for scrambled eggs on toast for a patient with a wheat allergy.

  4. If it is possible - prepare the dish without the allergen present and mark it clearly so staff know it must go to the patient with the food allergy.

    If it is not possible - let the ward staff know as soon as possible that they will need to speak with the patient to choose another, more suitable option. See how to view and cancel a patient’s meal order in the Ordering meals guide.

The delivery sheet

This is your serving guide that you refer to when plating up a patient's meal. It shows you:

  • One patient’s meal order per row

  • Courses shown in columns

  • Order organised by tray colour

  • The patient’s profile information, including:

    • Display name and bed number

    • IDDSI level

    • EDAR status (if applicable)

    • Diet and allergy information

Troubleshooting

A patient is missing on the delivery sheet

Their order may not have been placed yet.

A patient’s details look wrong

The delivery sheet shows the patient profile at the time the order was placed.

If the profile has changed since then, the order may need to be cancelled and re-ordered
